The beer undergoes a refermentation in the bottle with a wild yeast: Brettanomyces, also known as Brett yeast. This process gives the beer a longer natural shelf life and ensures a unique taste evolution over the years. Each edition is only bottled once a year, resulting in a limited availability of every release. After three months of maturation, the beer is young and
