Domaine de Chassorney, Chardonnay "Combe Bazin" Saint-Romain, Côte de Beaune, France 2023 organic The vines were planted between100% Chardonnay Delicious, textured natural Burgundian chardonnay, from experts at their craft. Organic farming, with no machinery. Vinification in concrete egg with indigenous yeast, followed by malolactic fermentation. The wine then ages for 9 months in concrete. Fined with casein and bentonite clay, bottled unfiltered, with minimal sulfur. In 2022, Aurlien Verdet acquired the entire Domaine de Chassorney from Frdric Cossard, after 3 years working
